Thêm rượu nấu ăn, xì dầu, đường, hạt tiêu vào tiếp tục đảo. Đổ 1 bát nước sôi vào, đậy vung lại và đun sôi trên lửa nhỏ khoảng 15 phút cho đến khi nước cạn dần. Rắc hành lá vào chảo lươn, đảo tiếp rồi tắt bếp.
